The oil is greenish gold in color with an aroma and taste that is quite fruity and full-bodied, with notes of green tomato, fresh herbs, hazelnut, and artichoke.
It can be used on its own as a condiment for vegetable soups, vegetables, raw or cooked fish. It can also be used to prepare roasts, fried fish, or meat.
